Hard to imagine that a suit could give a waterpolo player much of an advantage unless it could prevent him from being held back by someone grabbing his suit underwater.
And we all know that tear-away suits are not gonna be a soluting for that no matter how much we want it.
Besides polo players seem to often have normal sized body types rather than the sleek racing-dog bodies of speed swimmers. Maybe stationary buoyancy, bulk and muscalarity are more important in waterpolo than breakaway speed and aerobic fitness for long-distance maintanence of that speed which would be needed for racing.
It must be like the adjustments that sprint and long-distance track stars would have to make to play football.
And which you prefer in uniform is a matter of taste. Personally I'm omnivirous.
